Honey moisture: why 18.6% is the line
Honey does not spoil, with one exception: if there is enough water in it, wild yeasts will ferment it in the jar. The line most beekeepers and the USDA extracted-honey grading standard use is 18.6% moisture. Below it, honey is stable for years. Above it, you are running an experiment on your customers' shelves.
Why wet honey ferments
Honey always contains osmophilic yeasts; they arrive with the nectar. In dry honey they cannot grow, because the sugar concentration pulls water out of them. Add a little more water and the balance flips. As rough working ranges, drawn from the classic honey literature:
- Below about 17.1%: safe from fermentation regardless of yeast load.
- 17.1% to about 18.6%: usually fine; risk rises with yeast count and warm storage.
- Above 18.6%: real fermentation risk. Above 19 to 20%, expect it.
Fermenting honey shows as fine foam on the surface, a swollen lid, a sour or yeasty smell, and a thin, weepy texture. It is not dangerous, and it is not sellable.
Measure it, do not guess
A refractometer is the tool: honey models cost 30 to 60 dollars, take a drop, and read in seconds. Calibrate it (most come with a reference block or use extra-virgin olive oil per the manual), let honey and instrument sit at room temperature, and take readings per batch, not per season. Two supers pulled three weeks apart are two different batches.
Rules of thumb that help but do not replace the reading:
- Capped honey is usually dry. Bees cap honey when they have cured it, typically 17 to 18%. It is a good sign, not a guarantee, and varies with humidity.
- The shake test for uncapped frames: hold the frame flat over the hive and give it a sharp downward shake. If nectar rains out, it is not honey yet. A mostly-capped frame that passes the shake test is generally fine to pull.
- Climate matters. Extracting in a humid week, or leaving wet honey open in a humid room, raises moisture. Honey is hygroscopic; it takes water from the air.
If a batch reads high
- Dry it before extraction if you can: stack the wet supers in a closed room with a dehumidifier and a fan for a day or two, then re-check.
- Blend deliberately. Moisture blends by weight. Mixing 40 pounds at 19.4% with 60 pounds at 17.2% gives 100 pounds at about 18.1%: math you can do on paper, as long as you trust both readings. Blending two batches you never measured is just hoping at a larger scale.
- Or sell it as what it is: high-moisture honey makes fine mead and bakers rarely care. It just cannot sit in a retail jar through a warm autumn.
One honest warning about blend math: a weighted average is a claim about the whole blend being mixed uniformly. Stir properly, and re-check the blended batch rather than trusting the arithmetic alone.
Record the number
The reading belongs in your harvest record, attached to the batch id. When you bottle in November from three summer batches, the only moisture information you have is what you wrote down in July.
